Today, we go with Damián Elizalde, our head chef, to do the shopping in the Mercat de l’Olivar in Palma, where our providers have their retail stores too. Here is where we can find that variety of the freshest and highest quality fruits, vegetables, meats and fish that we would later use for the making of our dishes, always based on daily products with the best origin.
Just as Damián tells us, “Every night, by the end of the service, we place the order for the products that we need, and that we would later use in our cooking”. Always counting on the same providers, Elizalde tells us that they are reported about the best available products. “Regarding fish, we use much hake and salmon, and for the new recipes in this year, rock mussels and grouper to be marinated with ham broth, as a new addition in our menu”.
Damián has been in the world of cooking for 15 years, and he still keeps the same passion from the beginning. “It’s been 10 years with Marc Fosh. I worked in his other restaurants, and both he and Kevin Becker are my mentors. I daily learn from their experience, and they let me feel free to express my own creativity and style”.
In Marc Fosh Catering, we always want to keep innovating and enhancing our gastronomical offers. “The whole catering team went to Barcelona for 1 month, we visited prestige restaurants as Can Jubany, and learnt new trends to be applied in our dishes, in order to always keep offering the best for our customers”.
