The prestigious chef Marc Fosh irradiates the passion for gastronomy in his own words: “A cook decides his way of being, his cooking and his line of work“. So we know the Londoner cook Marc Fosh, by his enthusiasm in picking influences from all over the world and for creating his own style: Unique Cuisine, focused on fresh ingredients and quality products, with a touch of inspired brilliance. “I began in this profession by chance”, acknowledges Marc Fosh. He initiated his culinary career being just 17 years old and what captured him was the team spirit. His dreams were not aimed on becoming a renowned chef, but on being a football player. Tough it was the essence of his favourite sport, team work, what somehow made him feel captured by the culinary universe. “I began to like cooking because of its fellowship, its way of working, and little by little I began to fall in love with the world of gastronomy”, related Marc Fosh.
Passion for the Mediterranean
Marc Fosh’s career started up in London, it continued in France until arriving in Spain (Majorca) where he’s been residing for 19 years. After an intense formation in French Cuisine, characterized by the excessive presence of butter and the scarcity of freshness, his arrival in Spain was marked by the discovery of olive oil, “I’ll always remember when they taught me how to cook bacalao al pil pil(cod ‘al pil-pil) in the Basque Country, with just two basic products: olive oil and cod”
For the English chef, the most special thing is the path that each one walks as a cook, “For me, the game of combining flavours is the nicest thing, the process until arriving to the final dish“, he explains. Marc Fosh’s cuisine is characterized by the contrasts that the Mediterranean provides. “the products and the ingredients are very special“. That’s the reason for his ambition of gathering influences from every country.
The essence of Marc Fosh’s companies
Marc Fosh possesses two restaurants, Simply Fosh and Misa Braseria, along with his catering company which has his name, Catering Marc Fosh. The chef explains the importance of working in a team and of expressing his philosophy in each of his enterprises. “The raw materials are the same and we must always be faithful to our philosophy, it’s our signature. With the best products, our work becomes easier”, he adds.
