Mallorca is characterized by many favourable elements such as its climate, culture and heritage and of course, its food. Many top chefs base the development of new dishes with which to delight taste buds worldwide, upon typical Balearic recipes, without losing their essence. Now that Easter is approaching, it’s a good time to take a look at the traditional dishes cooked in Mallorca, many of which we wait a whole year to taste again, even though they can be eaten during any season. Easter is a time for family gatherings, where long lunches are held and favourite dishes are eaten. Of course, the “panades” cannot be forgotten. These are small, individual pasties stuffed with meat, peas, sobrasada¸ bacon or fish.
Nor can we forget the “robiols”, baked, sweet pastries filled with “angel hair squash” (sweet pumpkin), jams, quince and even chocolate or custard cream, or the “crespells”, sweet pastries made from the same dough as the robiols, but without any filling and cut into different shapes, with the most traditional being circular or star-shaped.
